In its center there is a circular opening housing the actual grill grate, 335 mm in diameter, supported on three legs, which allows air circulation and easy access to the fire underneath.

It is recommended to use vegetable oil, such as olive oil, during the first uses on the griddle. Olive oil has a lower smoke point, allowing the plate to develop a nice black-brown patina. After a few uses, you can switch to oils with a higher smoke point, such as sunflower oil.
